About Giapponese Sushi

Born in January of 2008, Giapponese is committed to bringing the highest
quality and most diverse variety of fish from the Tsujiki market in
Tokyo, as well as the rest of the world. Executive chef/owner Henry
Chan trained under Japanese master chef Toshi Hiroaka, who grew up
in a small fishing village of the coast of the Sea of Japan. There he mastered
the art of fish from his father, a local fisherman. After 26 years,
Toshi came to the U.S. and brought with him a deep level of tradition and
excellence in sushi. Today, that same level of commitment is alive and thriving
in Chan, and he continues the tradition while incorporating many influences
and styles, taking from Chinese, Italian, and American cuisines, creating
a unique fusion unlike anything in the Twin Cities.
